The benefits of mindful eating are many. It can be an enjoyable way to reconnect with your body and mind. Practiced regularly, this technique will improve your concentration, energy levels, and overall well-being. It also helps reduce stress and promote good health.

EMOTIONAL EATING

One of the best ways to practice mindfulness is by making an awareness of the urge to eat. You may feel tired, angry, or anxious and want to eat to alleviate these feelings. During this time, you may notice that the urge to eat is driven by another reason. When you are hungry, you may be feeling angry, stressed, or worried about your finances. The goal of mindful eating is to make conscious choices about the foods you ingest and enjoy them. The simplest way to practice mindfulness with food is to be mindful of your emotions and the cues that trigger the craving.

By paying attention to the sensations and feelings that your body experiences when you eat, you are more likely to realize that your body needs food to function properly. This allows you to better recognize your hunger signals and reduce the emotional band-aid eating. As a result, you can make informed decisions about how to eat, based on the physical and emotional state of your body. As a result, you will feel healthier and happier in a long-term manner.

VEGGiE KABOBS

These marinated fresh veggie kabobs are packed with tons of flavor – perfect as a healthy side dish to any meal!


INGREDIENTS:

  • 1 large carrot, sliced
  • 2 cups white mushrooms
  • 2 red or green bell peppers, cut into chunks
  • 1 cup cherry tomatoes
  • 1 red onion, cut into chunks
  • 2 zucchinis, thick sliced
FOR THE MARINADE
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, pressed
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil

  • Salt and pepper, to taste

DIRECTIONS:

  1. Preheat oven to 400 degrees F.
  2. In a small bowl, whisk together olive oil, garlic, lemon juice, oregano and basil; season with salt and pepper, to taste.
  3. Thread mushrooms, tomatoes, bell peppers, onion and zucchini onto skewers. Place skewers onto a baking sheet. Brush olive oil mixture onto the skewers and let sit for 10-15 minutes.
  4. Place into oven and roast until tender, about 10-12 minutes.*
  5. Serve immediately.

NOTES:

*These can be grilled over medium high heat, about 5-6 minutes per side.
